Fruits of plum cultivars Lady Red, Ruby Red, Sunkiss and Sundew (grown in South Africa) were sampled at 3 maturities, a week apart (target flesh firmness of 9, 7 and 5 kg). Half the fruits were subjected to single-temperature storage (42 days at -0.5 °C followed by a shelf-life period of 3 days at 15 °C).
