Summary

Modified atmosphere packaging is useful for protecting vegetables, especially those with short shelf lives. Before packaging the product is usaually prepared for consumption (washed, peeled, sliced). Properly chosen type of packaging material enables an equilibrium modified atmosphere to be kept inside a package. Gas permeabilities of packaging films in relation to vegetable respiration rates are reviewed, and mechanical and physical properties of films are presented.
