THE PRESENCE OF THE BACTERIA YERSINIA ENTEROCOLITICA IS OFTEN FOUND IN RAW MILK. THE ARTICLE DESCRIBES THE FATE OF THIS ORGANISM IN YOGURT DURING ITS PREPARATION, FROM INFECTED MILK, AND STORAGE AT 277 K (4 DEG C). DETAILS OF THE INVESTIGATION, MATERIALS AND METHODS ARE DESCRIBED. RESULTS SHOWED THAT BACTERIA BECOMES INACTIVE AND FINALLY DIES BUT CAN SURVIVE FOR MORE THAN 6 DAYS DEPENDING ON SEVERAL FACTORS.
