The detection of bruising and ripeness in fruit and vegetables.

Summary

The reflection of light from an object depends on its absorption characteristics and on the scattering properties of the material. It is the latter property which the authors seek to exploit in the study. The cell structure and cell wall integrity of the surface tissue of fruit and vegetables strongly affects the scattering of light and hence absorption properties of the material. Consequently the reflection at a weakly absorbed wavelength in the Near Infrared Reflectance (NIR) can provide an extremely sensitive probe of the surface properties of the produce. This enables the detection of bruising in fruit prior to discoloration and the determination of fruit ripeness. It is proposed that a NIR imaging capability be incorporated into a vision system for grading and sorting of produce.
