Study of the colour development of tomato during postharvest handling.

Summary

As one of the most important factor is the colour in consumer acceptance, the colour developing of green tomatoes was investigated at different temperatures to collect data in order to develop model describing the colouration and texture profile of tomatoes during ripening. Both the visual colour score and the tristimulus colour component could be used to describe the ripening of tomato. The ripening and colouration of tomatoes followed the sigmoid type curve as a function of storage time. During ripening the coefficient of elasticity could describe the texture profile of tomatoes.
