Summary

The aim of this study was to establish whether cabbage (Brassica oleracea var. capitata L.) has a dormant stage and if so, when it occurs. Cabbages were harvested on 16 July and at one-week intervals thereafter for a period of seven weeks and stored for either 1, 2, 3 or 4 weeks. Dry matter content, soluble solids and soluble carbohydrates in the core and the leaves were determined. To determine the stage of dormancy, a growing test was developed. The growing test and the measurements were conducted immediately after harvest and after different storage times.
