Summary

Special attention should be paid to fertilization and nitrogen dose if enzymatic browning tends to cause problems in certain varieties. Also, rainfall before harvesting should be taken into consideration when sorting crops for different purposes. Night frost does not induce enzymatic browning at the beginning of storage.
