The influence of modified atmosphere packaging on the shelf life of fresh poultry.

Summary

This volume presents the proceedings of the first of a series of four conferences, organised under the auspices of the AIR Concerted Action CT94-1456, held in Doorn, The Netherlands, on October 23-26, 1995 (see also this Bulletin, references 2000-1645, 1646 and 1648). The 17 papers presented provide an insight into some of the research that is being undertaken in Europe in relation to the spread of pathogens, and other microbes, from the farm to meat via the abattoir. Some of the papers will be abstracted in a future issue of the IIR Bulletin.
