The temperature of frozen foods in open display freezer cabinets: simulation and testing.

Summary

The temperature of frozen foods in open display freezer cabinets is strongly affected by ambient climate conditions. The paper presents the application of a two-dimensional finite element method to the prediction of load temperature in an open display freezer cabinet. Standard cellulose packages are considered and the influence of the most important climate variables is investigated. The method is validated by comparison with the results of a series of experimental tests and provides a useful contribution to a better understanding of this essential link in the freezer chain.
