Summary

THE TRANSMISSION MATRIX METHOD IS USED FOR DEVELOPING A NUMERICAL ALGORITHM TO EXPRESS THE PHASE CHANGE PHENOMENUM. TWO MODELS ARE DESCRIBED: ONE CONCERNING THE PHASE CHANGE AT CONSTANT TEMPERATURE, THE OTHER DESCRIBING THEPHASE CHANGE AT VARIOUS TEMPERATURES. THE MAIN APPLICATION OF THE METHOD IS FOR CALCULATION OF FREEZING AND THAWING TIMES OF VARIOUS TYPES OF FOODSTUFFS. THE VALIDITY OF THE MODELS IS ALSO STUDIED.
