Summary

IN TRADITIONAL BREWING, THE VAPOUR FROM THE WORT COPPER IS EXHAUSTED TO ATMOSPHERES. AS THIS IS LARGELY POLLUTED WATER VAPOUR AT 373 K (100 DEG C) CONSIDERABLE ENERGY IS WASTED. A RECENT IMPROVEMENT HAS BEEN TO COMPRESS THIS VAPOUR TO A PRESSURE CORRESPONDING TO ABOUT 13 K HIGHER SATURATION TEMPERATURE, THEN TO CONDENSE IT IN TWO STAGES, HEATING THE WORT, THEN THE BREWING WATER. A SUITABLE COMPRESSOR FOR THIS PURPOSE IS A CENTRIFUGAL UNIT. THE ARTICLE SHOWS COMPARISONS BETWEEN THIS AND OTHER SYSTEMS AND ALSO BETWEEN DESIGN AND ACTUAL OPERATING CONDITIONS. D.W.H.
