Résumé

Factors affecting the organoleptic quality of fruits include colour, aroma, firmness, sweetness and acidity. Some fruit species complete maturation after harvesting while others need to ripen on the tree. As a result of a number of experiments in Italy, tables are provided showing indicators of maturity (separately for harvesting and for consumption in some cases) for cherries, peaches and nectarines, plums, pears, apples and kiwifruit. It is stressed that the many cultivars of peach and nectarine on the market make the determination of general maturation indicators very difficult. In the case of apples and pears, suitability for prolonged storage must be taken into account when determining harvesting times.
