Epidermal ultrastructural mechanism of chilling-injured citrus fruit.

Résumé

Examination of the epidermal cells of grapefruit and lemon fruits that had been stored at low temperature (2 deg C), but did not yet have visible signs of chilling injury, revealed cracks around the stomata, inside which calcium oxalate crystals grew. Water loss increased after cold storage, before the appearance of visual superficial pitting on the peel. Loss of water serves as a nondestructive predictor of chilling injury prior to visible symptoms.
