Résumé

Cold storage at 0 or 2 °C decreased and delayed the peak in ethylene production of peaches of the two cultivars in both ripening stages compared with that of peaches kept at room temperature. Fruits picked at the greenish yellow stage had higher and earlier ethylene production than those picked at the light green stage, independently of the storage temperature. Peaches cv. Diamante had higher ethylene production than that of cv. Jade, harvested at the same ripening stages.
