Résumé

Forty samples of pizza and 24 samples of "mozzarella" cheese topping were obtained then microbiologically analysed. The samples were taken in eight Milan pizza restaurants with random criteria. The samples were taken in order to detect the following microbes: Pseudomonas spp., PCA, Escherichia coli, coliforms,bacilli, Bacillus cereus. In the "mozzarella" cheese samples, the presence of coliforms frequently occurred along with Pseudomonas contamination. There was no evidence of coliforms and E. coli in the pizza samples. The importance of respecting hygiene rules during the whole production process, from production factories to the restaurants where the pizza product is assembled and consumed by the customer, is obvious.
