Shelf-life prediction of Elsanta strawberries packed under modified atmospheres: an integrated model approach.

Résumé

The shelf life of Elsanta strawberries is limited among others by infection by Botrytis. The decay is described by a simple logistic growth curve. The growth rate depends on temperature and on the relative respiration rate of strawberries. The respiration was described with a Michaelis Menten type gas exchange model. The parameters on the gas exchange of Elsanta strawberries were estimated on an independent set of data as a function of O2, CO2 and temperature. The experimental data on Botrytis infection gathered at different modified atmosphere and controlled atmosphere conditions from different batches of strawberries and at different temperatures could be explained by the model for 83%. Differences between individual batches were explained by different initial conditions related to the ripening stage. By introducing an upper limit of acceptance (of 5% infection) this integrated model approach was used to study the effect of modified atmosphere conditions (O2, CO2 and temperature) on the shelf life of Elsanta strawberries as limited by the Botrytis infection.
