Nucleotide degradation as an indicator of freshness in groundfish and small pelagic fish species.

Résumé

The breakdown products of adenosine triphosphate (ATP) and K(1)-value were determined as a mean to evaluate the freshness of two ground species, black scabbardfish and silver scabbardfish and four small pelagic species, chub mackerel, Atlantic mackerel, horse mackerel and European sardine. The results obtained for pelagic species indicated that freshness standards based on K(1)-values can be very useful and in what concerns to ground species more results are still need.
