Résumé

This 3-year study conducted in the United Kingdom was designed to determine the prevalence of Campylobacter and Salmonella on whole raw chicken in a retail context. In all, 2228 samples were collected between November 2001 and December 2004. The Campylobacter rate remained stable, whereas the Salmonella rate declined significantly over the study time frame. Campylobacter is thus a greater problem that needs to be addressed.
