Résumé

India is now the largest producer of milk and milk products in the world. Since the dairy industry forms an important part of the country's economy, as it generates employment opportunities for millions of its rural population (estimated at 75 million women and 16 million men), it is being modernized and the focus of development is now shifting to the production of quality milk at minimized cost, thereby adding value and quality to milk-based products.
