Among different cultivars studied, Angurlata(V5) recorded the highest total soluble sugar, reducing sugar, ascorbic acid and lycopene contents during storage for 4-6 days at room temperature or at 4 °C. The nutrients are better preserved in fruits stored in the refrigerator. Lycopene content was higher in fruits stored at room temperature. Lycopene content is a quality parameter for consumer acceptance. The results also indicated that tomato fruits can be stored for 6 days without much loss in nutrient content.
