A computational fluid dynamic model of beef chilling.

Summary

The heat transfer process in beef chilling has been simulated using the CFD (computational fluid dynamics) package Fluent. The complex 3D geometry of a beef carcass was modelled and meshed with more than 100,000 computational cells. The external convection and internal conduction heat transfer processes are simultaneously modelled. The predicted heat load is lower than the available experimental data.
