A FINITE-DIFFERENCE NUMERICAL MODEL FOR HEAT AND MASS TRANSFER IN PRODUCTS WITH RESPIRATION AND TRANSPIRATION IS PRESENTED. BESIDES CONDUCTION AND CONVECTION, THE MODEL ALSO ACCOUNTS FOR EVAPORATIVE COOLING DUE TO TRANSPIRATION AND RADIATION HEAT TRANSFER. THE MODEL IS MORE ACCURATE THAN CURRENTLY USED FINITE-DIFFERENCE MODELS AND REQUIRES LARGER TIMESTEPS.
