Summary

A MODEL OF HEAT AND MASS TRANSFER DURING CONVECTIVE COOLING OF PILES OF FRUITS OR VEGETABLES IS PRESENTED. IT CONSISTS OF THREE PARTIAL DIFFERENTIAL EQUATIONS: THE MASS BALANCE FOR MOIST AIR, THE ENTHALPY BALANCE FOR MOIST AIR AND THE ENTHALPY BALANCE FOR THE PRODUCT. THE SYSTEM OF PARTIAL DIFFERENTIAL EQUATIONS WAS SOLVED NUMERICALLY FOR A CARROT PILE. THE RESULTS ARE PRESENTED IN THE FORM OF THE POSITION IN THE PILE AND THE COOLING TIME. THE MODEL ALSO MAKES IT POSSIBLE TO CALCULATE MOISTURE LOSS DURING COOLING.
