DESCRIBES A SIMPLE APPARATUS FOR RECORDING THE MAXIMUM TENSION GENERATED AT A SMALL TENSILE STRESS. THIS TECHNIQUE MAKES IT POSSIBLE TO MEASURE RIPENING RATE AT 2 AND 15 DEG C AND THE SHEAR STRENGTH OF COOKED MEAT. THE RESULTS ARE COMPLEMENTARY OF TENDEROMETRIC MEASUREMENTS.
