Summary
Cherimoyas are unstable fruit, with a high respiration rate and a strong ethylene production. The question is to delay ripening, which is difficult since a temperature below 7 deg C causes deterioration. The fruit physiology is as yet unknown. It seems that modified-atmosphere storage might be suitable, but it is first necessary to better understand the ripening mechanism.
