Summary

The main purpose of this work was carried out an isolating process and the identification of the LAB present as well as the characterization of its activity against Listeria monocytogenes. Results showed that have no antimicrobial activities onto "spot on lawn" assay for bacteriocins of hydrogen peroxide and the inhibitory effects were due to the presence of organic acids alone.
