Air precooling of strawberries and plums: influence on ripeness and quality.

[In Italian. / En italien.]

Author(s) : TONINI G., CACCIONI D.

Type of article: Book chapter

Summary

The results are summarized of five years of research on the optimum conditions for air precooling, on how the time interval between harvest and precooling affects fruit ripeness, on the development of parasitic diseases and on the weight losses in strawberries and plums. Precooling must be carried out as soon as possible after harvest with a forced air system, to reduce weight losses, growth rate of pathogenic agents, and to slow down the ripening and senescence processes.
