Ambient temperature storage of yellow mombin (Spondias mombin L) in four stages of maturity.

Summary

This work evaluated the storability of yellow mombin under ambient temperatures and identified the stage of maturity in which the ripening processes could be completed similarly to naturally tree-ripe fruits. Fruits were harvested at four stages of maturity as identified by colour: 1) light green; 2) predominantly green; 3) predominantly yellow, and 4) yellow. Fruits were placed in 200 g trays, covered with PVC film and stored for 4 days at 25 °C +80% RH. Similar quality to stage was reached by fruits harvested at stage 1 on the fourth day of storage and by the other treatments on the third day. As for decay, fruits harvested at stages 1 and 2 were in good condition for 4 days and at stage 3 and 4 for 2 and 1 days, respectively.
