Summary
The main free amino acids in cucumbers were glutamic acid, arginine, aspartic acid, glycine, alanine and methionine. Alanine accumulated and glutamic acid decreased in chilled fruits stored for 18 days. The alanine concentration in chilled fruits as a percentage of the total free amino acids was low compared with previous reports.
