THE COSTS ARE PRESENTED FOR A FREEZE-DRYER WITH ABOUT 20 M2 OF SHELF SURFACE EQUIPPED WITH RADIANT HEATERS OR A COMBINATION OF RADIANT AND MICROWAVE HEATERS. THE CONVENTIONAL DRYER OPERATES 2 CYCLES/DAY AND THE MICROWAVE DRYER 5 CYCLES/DAY. BOTH OPERATE 336 DAYS A YEAR. THE TOTAL ESTIMATED COSTS PER POUND OF FROZEN FOOD ARE $ 0.124 AND $ 0.0824 FOR CONVENTIONAL AND MICROWAVE DRYING, RESPECTIVELY.
