Summary
This process when applied to optimization of heat transfer in fermentation tuns, reduces problems of the maximum density of beer at 3 deg C. Pilot trials are carried out in cylindro-conical tuns, fitted with a carbon dioxide circulation system. The efficiency of the process is evaluated.
