Summary

BIOCHEMICAL CHANGES IN POST-CATCH FISH MUSCLE ARE VERY COMPLICATED. ON THE BASIS OF THE CHEMICAL CHANGES, THE IMPORTANT MATTERS OF CHOOSING THE INDEX OF FISH-FRESHNESS AND OF THE TEMPERATURE DEPENDENCE ON THE REACTION SYSTEM DURING STORAGE OR TRANSPORT ARE REVIEWED. FURTHERMORE, IT MUST BE POINTED OUT THAT THERE IS LITTLE CORRESPONDENCE BETWEEN THE SCIENTIFIC METHOD AND THE ORGANOLEPTIC METHOD IN THE JUDGMENT OF FRESHNESS. THE AUTHORS CALL ATTENTION TO THE DEVELOPMENT OF TECHNICAL METHODS IN THE REFRIGERATED FIELD FOR MAINTAINING FRESHNESS.
