Appropriate variables for predicting freezing temperatures of strawberry package using a simplified method.

Summary

Average and central temperatures vs time were predicted for strawberries packed in a metal box. The average temperature was calculated with the equation proposed by Schwartzberg, and the central temperature was determined with the equation derived from the heat transfer solution, following the procedure used by Schwartzberg to obtain the average temperature equation. A computer program for a PC was developed to estimate those temperatures for a given freezing time. The accuracy was satisfactory, and the proposed procedure gave generally good agreement when tested with experimental central temperature curves.
