Summary

The effect of prolonged cold storage on muscle adenosine triphosphatase (ATPase) and lactate dehydrogenase (LDH) activities was studied in a variety of fresh water and brackish water fish. The results indicated that loss of activities of ATPase and LDH in fish muscle was significantly related to early changes in quality of frozen stored fish.
