Summary

Leeks (cv. Arkansas) were minimally processed, packaged in a permeable plastic film and stored at 4 deg C for 10 days. Biochemical characteristics, microbial growth and sensory properties were measured during storage. It was concluded that the physiological-biochemical characterization of the minimally processed leek product reflected very well its sensorial quality.
