Summary

WHOLE GREENLAND HALIBUT OR FILLETS WERE PLACED IN BULK IN ICE REFRIGERATORS IN AIR OR IN A 25% CO2 -75% N2 ATMOSPHERE, THEN STORED FOR 20 DAYS AT 273 K (0 DEG C) + OR -1 K. THE RESULTS OF MICROBIOLOGICAL ANALYSES, THE TOTAL VOLATILE BASIC NITROGEN PERCENTAGE AND ORGANOLEPTIC EVALUATIONS SHOWED THAT WHOLE HALIBUT IN A MODIFIED ATMOSPHERE HAS A STORAGE LIFE OF MORE THAN 15 DAYS.
