Summary

Cod fillets are packaged under 2 atmospheres (70% CO2-30% N2 and 70% CO2-20% N2-10% O2) and stored at 6 deg C for 0 to 12 days. Study of the changes in atmosphere composition, microflora, total volatile nitrogen, pH and organoleptic quality. The presence of O2 does not affect the microflora and the total volatile nitrogen, but improves the appearance of fillets. CO2 extends the shelf life (up to 10 days).
