Cell wall analysis of different apple cultivars.

Summary

Polyethylene glycol-insoluble cell walls, total pectin content, neutral carbohydrate released from the cell walls, beta-galactosidase and polygalacturonase activities were determined in several apples cultivars during their storage at 4-6 °C and 90% relative humidity. The ultrastructure of apple tissue was also determined by scanning electron microscopy (SEM). There were differences between the activity of beta-galactosidase, polygalacturonase, pectin and neutral sugar content in apple cultivars. Good correlation was found between the SEM structure and the chemical analysis.
