Summary
Since the different phases of kiwifruit softening have been associated with distinct physiological and biochemical processes, the authors have related the patterns of amylase, beta-galactosidase, endo-1.4-beta-glucanase and polygalactonurase activities during fruit softening to the ethylene climacteric. In addition, the effect of propylene, an ethylene analogue was evaluated.
