Summary

Investigations into quality control in production and storage of apples of the varieties Golden Delicious, Gloster, Jonagold and Idared were carried out from May 1991 until August 1993. When apples were only cooled until being submitted to normal storage, analyses of the fruit showed a stronger decrease in quality until that point of time in comparison to the total storage period. For apples the decrease of quality during the total storage period depends mainly on the original quality of the fruit at harvesting. Fruits which were harvested too early or too late show a more significant decrease in quality than apples stored at the optimum harvest date. The decrease in weight at ambient temperature was eight times higher within fourteen days than with cooled storage.
