RECENT STUDIES ON TROPICAL SPECIES STORED UNDER CHILLED CONDITION HAVE SHOWN THAT SOME SPECIES MAY UNDERGO A COLD SHOCK CONTRACTION WHEN CHILLED AND OTHERS HAVE A MUCH LONGER CHILL STORAGE LIFE THAN COLD OR TEMPERATE WATER SPECIES. THIS PAPER DESCRIBES THESE FINDINGS AND DISCUSSES THE POSSIBLE TECHNOLOGICAL SIGNIFICANCE OF DIFFERENCES BETWEEN TROPICAL AND COLDER WATER SPECIES.
