Summary
The paper presents the use micro-jets to cool the meat. Presented a research position and results of preliminary studies. Experimentally determined cooling curves for different species of meat for the given parameters of gas in micro-jets. Then modeled the temperature distribution in the samples and heat transfer coefficients determined from the cooling gas to the sample of meat.
