The principles of controlled atmosphere storage are enumerated and discussed, and a table of storage life vs. temperature and gas composition is given for a number of fruits and vegetables. Emphasis is placed on rapid reduction of product temperature and oxygen level in the store and 3 types of atmosphere generator to achieve this are described. G.R.S.
