Summary

The quality of apples and pears can be greatly improved by applying controlled atmosphere condtition, of 1-2% oxygen. Fast precooling and storage at -0.5°C in addition to rapid application of CA conditions also improve the storage life and eating quality of apples and pears. CA storage of Flamekist nectarines and Santa Rosa plums, is not considered practical or economical due to the poor texture (mealiness) and breakdown which result. Experimental data are presented to quantify these effects .
