Summary
During the harvest-distribution circuit (i.e., 5 to 7 days), chemical properties can vary greatly, with possible fluctuations of 1 to 1.5 points on average for the refractometric index and a fall of 10 to 50 milliequivalent/liter for acidity (depending on the variety).
