Summary

Excessive firmness is often mentioned as an obstacle to consumption of peaches and nectarines. "Managed" ripening of the fruit before it is displayed to consumers would be a good solution. The process consists of continuing the natural maturation that begins on the tree under a set of clearly defined conditions.
