Summary
Excessive firmness is often mentioned as an obstacle to consumption of peaches and nectarines. "Managed" ripening of the fruit before it is displayed to consumers would be a good solution. The process consists of continuing the natural maturation that begins on the tree under a set of clearly defined conditions. This article reviews the factors that must be taken into account to ensure the success of the process.
