Summary
The rules and the benefits of cold storage of raw meat and meat products under modified atmosphere are described. The method of modified atmosphere produced is discussed. The effects of carbon dioxide, oxygen and nitrogen on the quality and microbiological safety of meat are described. The main recommendations are to focus on needs, to use foils with low carbon dioxide permeability and a continuous low temperature.
