Summary

A MATHEMATICAL MODEL IS PROPOSED FOR THE HEAT EXCHANGE PROCESS IN POTATO STACKS DURING BULK STORAGE. AN ANALYTICAL AND NUMERICAL SOLUTION IS PRESENTED, MAKING IT POSSIBLE TO DETERMINE THE OPTIMUM VENTILATION CONDITIONS FOR PRODUCTS IN AREAS WHERE VENTILATION IS OBSTRUCTED. GRAPHICAL SOLUTIONS WERE OBTAINED TO DETERMINE THE DIMENSIONS OF VENTILATED AND NON-VENTILATED AREAS IN ORDER TO ENSURE QUALITATIVE STORAGE CONDITIONS FOR THE PRODUCTS.
