Cucumber moisture loss during forced-air cooling.

Summary
This study experimentally determined the moisture loss of individual cucumbers for four levels each of airflow, temperature and relative humidity. Equilibrium weights ranged from 79 to 97% of original weights. Moisture loss data, with respect to time, was fitted to an exponential equation having three coefficients. Multiple linear regression between environmental conditions and moisture loss coefficients yielded models to predict the three cucumber moisture loss coefficients with adjusted R2 values ranging from 0.54 to 0.47.
