Summary

This Web-enabled survey of French consumers was aimed at knowledge of impurity in home refrigeration practices in France. 809 consumers were surveyed. Only 37% ensured that the temperature in their refrigerators was 4°C or below. 89% used sponges to clean their refrigerators and this shows that disinfection of sponges is a key recommendation. Only 37% of respondents systematically wrapped food. Many respondents left hot or warm food at room temperature overnight before placing it in the refrigerator and were unaware that such food should be placed in the refrigerator within 2 hours. Imperfect door closure was probable in 2% of respondents, indicating that higher energy consumption and formation of water and therefore a risk of microbial growth was present.
